Vegetable Fritters
Samosa (spicy vegetable filled flaky pastry)

Ingredients:

Dough

  • Water to Knead dough
  • 1 cup all purpose flour
  • 2 Tbsps. oil
  • 1/2 tsp. salt

Filling

  • 2 boiled potatoes
  • 1 Tbsp. fresh green peas
  • 1 tsp. cumin powder^
  • 2 diced green chilies
  • 2 Tbsp. chopped red onion
  • 2 cloves minced garlic
  • 1 tsp. roasted coriander powder^
  • 1 tsp. garam masala (opitional)
  • 1 tsp. turmeric^
  • 1 Tbsp. fresh chopped coriander
  • Salt to taste

Frying

  • Vegetable, Canola or Olive oil

  • Method:

Knead flour ingredients. Roll into small round balls. Flatten dough into 4"-5" circles. Cut into half and set aside.

Prepare stuffing by heating 1 Tbsp. oil in a wok^. Add onions, garlic and chilies to hot oil. Saute for about 7 minutes. Add turmeric, cumin and coriander. Mix well. Add peas and let the mixture cook and blend well. Add boiled potatoes. Mash the mixture, sprinkle salt to taste, add coriander. Add the garam masala at this point. Remove from heat and cool. Roll the mixture into golf size balls.

Place the cooked stuffing inside the semi-circle dough. Close by folding the tips of the semi-circle together. Seal with a little water and flour paste, press down edges.

Drop the finished stuffed shells into hot oil. Fry until golden brown on both sides. Maintain temperature to medium high so the dough cooks evenly.

Serve with your favorite chutney.
