Vegetable and Bean salad

3-bean and lettuce salad

A salad loaded with proteins in addition to taste.

Pointer 1: Can be prepared with canned beans.

Ingredients:

  • 1/2 cup chick peas
  • 1/2 cup black eyed peas
  • 1/2 cupy black peas
  • 1 Tbsp. of red onions
  • Fresh romaine lettuce
  • 1 tomato
  • 1/4 cup Shredded carrots
  • 1/2 Tbsp. crushed black pepper
  • 1 Tbsp. olive oil
  • 1 tsp. fresh lime juice

Dressing:

  • 1Tbsp. lemon juice
  • 2 Tbsp. olive oil

Method:
Add all the legumes, lettuce, onions and carrot shreds. Mix well. Add crushed black pepper, olive oil and lime juice. This is an extremely tasty salad and quite filling too.
